I took this Beet Salad to a luncheon with friends this week. It was a huge hit! It’s delicious and doesn’t take long to make! My favourite kind of healthy dish.
Beets are ridiculously good for you. They help fight inflammation, have anti-cancer properties, are rich in immune boosting vitamin C, high in fiber, contains manganese which is good for your bones, kidneys, and pancreas and, beets help to detoxify the liver.
Handful of lettuce
1/2 red onion
5 cherry tomatoes
1 handful of cilantro or parsley
1/2 cup of pine nuts
2 tbsp olive oil
2 limes, juiced (freshly squeezed)
sea salt & black pepper
Goat or sheep’s cheese
Rinse the lettuce and coarsely chop it. Place in a large mixing bowl. Peel beets and carrots and grate by hand or use a food processor. Slice the onion and tomatoes very thinly. Chop the avocados and cilantro / parsley and place all prepared ingredients in the mixing bowl. Add pine nuts, olive oil, lime juice, salt and pepper and toss well.
Top with goat or sheep’s cheese.
