Buckwheat Groat Porridge

Even though wheat is in the name, buckwheat is wheat-free and gluten free! Buckwheat is not a grain at all; in fact, buckwheat is related to sorrel, knotweed and rhubarb.

Buckwheat is high in fiber, manganese, magnesium, copper, and zinc, which are great for the immune system. It also contains 8 amino acids which makes it a good source of protein.

Buckwheat Groats are the hulled seeds of the buckwheat plant.

This breakfast porridge is delicious and oh so good for you!

Ingredients:

1/2 cup of buckwheat groats

1/4-1/2 cup of unsweetened coconut milk

1 teaspoon of coconut oil

Cinnamon

Stevia (optional)

Instructions:

Put one cup of water and the 1/2 cup of buckwheat groats into a pot. Bring to a boil. Lower heat and cover. Cook for 10 – 12 minutes. Drain the excess water. Stir in the coconut milk, coconut oil and add cinnamon. The amount of cinnamon you add is completely up to you. I love lots. You may like less. Start with a little and add to taste.
