There’s something about a raining Saturday in November that makes me want to make soup.
I had been to the Brickworks Farmer’s Market this morning and picked up leeks and cabbage. Along with veggies I had at home already and these two items , I put together this delicious, healthy and warming soup.
Chop 3 stalks of celery, one onion, the whites of 2 leeks and mince 6 cloves of garlic. Saute these veggies in a coconut oil until soft. Add 10 cups of water or veggie broth or a combination of the two.
Chop 4 small potatoes (or 2 large ones), 3 carrots and about 3 cups of cabbage. Add to the sauteed mixture along with 2 cups of frozen or fresh peas, 1 teaspoon of oregano, 2 teaspoons of dried thyme, salt and pepper.
Add one large can of rinsed white beans.
Add love while you stir.
