I arrived home from work today starving! I didn’t feel like snacking, so I made this super quick dinner. It was delicious and I know it will be just as good tomorrow!
Here’s what I did ~ and by the way, it only took about 20 minutes.
Put 1 1/2 cups of vegetable broth into a medium sized pot. Once the broth is boiling, put just under 1 cup of quinoa in the boiling vegetable broth. Cover and reduce heat to medium low. Cook for about 12-15 minutes.
While quinoa is cooking ……….
Melt approximately 1 tbsp. of coconut oil in a pan. Once melted add 1 choppped onion, 2 minced cloves of garlic and 1 chopped red pepper. Add about 1 tbsp. of curry powder.
Rinse one large can of chickpeas. Add to the mixture.
Put in approximately 1 large tbsp. of organic peanut butter. Let it melt.
Add 2 big handfuls of spinach.
Once the quinoa is done, fluff it with a fork, then add to the mixture.
Add salt and pepper.
