Beets are high in antioxidants and vitamins, they detoxify blood and help eliminate toxins from your liver! Wild rice is high in fiber, antioxidants and has twice as much protein as brown rice.
3 cups cooked wild rice
2 tbsp. organic butter or coconut oil
1 medium onion, chopped
4 medium beets, peeled and diced into cubes
2 tsp. garlic, minced
1 tsp. sea salt
½ cup pine nuts
1 tbsp. lemon zest
2 cups parsley, chopped
fresh pepper and salt to taste
¼ cup fresh squeezed lemon juice
In a large skillet, heat the butter or coconut oil over medium heat. Add onion and sauté for 5 minutes or until tender. Add beets, garlic, salt, pepper and lemon juice. Cover for 25 minutes, stirring frequently. You may need to add water while cooking. Beets are done when they can be easily pierced.
Remove from heat and toss in wild rice, lemon zest, pine nuts and parsley. Stir completely.
Serve warm or at room temperature.
